Just came across this post researching a food question. Great blog, by the way! If you can get to Chicago and don't mind bagged tea, you can definitely buy Linden tea at Cermak Produce. The tea is produced by Tadin (http://www.tadincorp.com). About $3.00 for 24 bags. Also, this tea would most likely be of Mexican or U.S. origin, so it may not be the right quality to add to a full Proust experience... ;) At Cermak, you can buy things like dried whole chamomile flower buds.
